
Open Lasagna with Munkebo Seafood Smoked Trout

- 1 can of Munkebo Seafood – Smoked Trout
- 1 pack of fresh lasagne sheets
- 1 clove garlic
- 100g butter
- 100g spinach
- 2–3 tbsp olive oil
- 20g pine nuts
- 10 green asparagus spears
- 2 burrata
- 2 radishes
- 1 organic lemon
- Salt and pepper (to taste)
INSTRUCTIONS:
STEP 1
Open the can of Munkebo Seafood Smoked Trout.
- Drain the liquid.
- Place the trout in a bowl and flake it into smaller pieces with a fork.
STEP 2
Trim the tops and bottoms off the asparagus. Slice the stalks into a mix of coarse and fine pieces.
Tip: Slice at an angle for a more elegant presentation!
STEP 3
Thinly slice the radishes.
STEP 4
Cut the fresh lasagne sheets into 4 pieces (you’ll only use half – 2 sheets total).
STEP 5
Boil the lasagne sheets in salted water for 3–4 minutes. Drain and lightly coat them with oil to prevent sticking.
STEP 6
In a pan, melt the butter with a little olive oil. Add the pressed garlic, pine nuts, radishes, spinach and asparagus. Cook gently for a few minutes over low heat.
STEP 7
Season with lemon juice, salt, and pepper.
STEP 8
On each plate, place a bed of spinach, then layer with asparagus, pine nuts, smoked trout, and sliced radish.
STEP 9
Place one lasagne sheet on top of the mixture, folding one half loosely over the filling.
STEP 10
Add half of a burrata, then layer again with radish, asparagus, pine nuts, smoked trout, and spinach. Spoon over a bit of the butter mixture for added flavor.
STEP 11
Fold the lasagne sheet over the filling.
STEP 12
Top with the remaining half of the burrata and finish with another small layer of radish, asparagus, pine nuts, smoked trout, and spinach. Drizzle with more of the butter mixture and grate a bit of lemon zest over the top.
STEP 13
Repeat the process on the second plate – this recipe makes two servings.
